My cheap simple healthy recipe #1: Seafood mushroom rice

I love to eat, and I love to eat good tasty creamy succulent food! Recipes don’t have to be exact and precise, they just have to taste good and be healthy!

If you have read my blog before, you know that I don’t mess around. I say it how it is and I do things the way they should be done. I don’t try to lure you into misconceptions and “healthy” diets, and I cook simple and cheap, especially since I started cooking school!

My partner and I have agreed to lose some weight (because, let’s face it: 3/4 of my wardrobe doesn’t fit me anymore and I’ve been in denial long enough!) for health reasons. We are cooking together every evening (whenever possible) in order to reduce the calories and bad fats, which will eventually lead to losing weight. Of course, we also started exercising as part of our plan. But, as you know (or should know!), exercising doesn’t make you lose weight… calorie reduction does. Exercising maintains your weight, but that’s it.

Anyhow… let’s get back to the recipe: it’s simple, it’s healthy, it’s men-approved, and it’s cheap! Also, you should know that I don’t use exact quantities so it’s up to you to decide how much “some”, “a little bit” and “enough” means.

For 4 people:

step 1: Sauté 1 onions, some garlic and a bunch of diced mushrooms.

step 2: Add shrimps, scallops, mussels, any flaky fish,… any type of fish or seafood that is in season and cheap… and add as much as you like 😉

step 3: Add one can of low-fat low-salt cream of mushrooms, some milk and (homemade) chicken broth until the thickness and creaminess is to your liking. It will thicken (aka reduce) as you cook it.

If you want your dish to be creamier than what you can achieve with milk, go for light cream cheese… a few spoons will do. It will melt and taste deliciously creamy without the calories of the cream & butter 🙂

step 4: Pour yourself a glass of wine – it’s healthy and you deserve it 🙂

step 5: Cook 4 servings of rice aside: 12188949_10153630041676083_2884550567821140953_ninstant or regular.

step 6: Add the cooked rice to the the pan.

step 7: Mix it all and serve 😉

It tastes like home, it tastes good and comforting and gives you all the ingredients that you need.
